Misolu Cabbage and Sweet Potato Salad
1 tablespoon chickpea moss paste
2 tablespoons olive oil
1 sweet potato (chopped cubes)
1/8 finely chopped onions
1/4 teaspoon of kosher salt
1/4 teaspoon grated lime peel
2 cup baby cabbage
1/4 cup fresh coriander
1/4 cup unshelled pumpkin seeds
1 teaspoon of sesame seeds
Miso - Ginger Sauce
2 teaspoons chickpea moss paste
2 teaspoons of grated fresh ginger peel and 2 lime juice
1/2 cup extra virgin olive oil
1. Mix the sauce of miso, ginger, and lime in a small bowl for the sauce. Gently add olive oil during mixing. Then mix well for the integration of the ingredients. Season with sea salt. After closing, keep refrigerated.
2. Set the oven to 220 degrees and place the baking sheet in the oven tray.
3. Mix miso and olive oil in a large bowl. And chop the sweet potatoes. Pour the mixture into the tray and fry for 20-25 minutes until soft and caramelized.
4. In a small bowl, chop the onions, salt, and grated lime shells and leave for 10 minutes to rest. When the potatoes are still warm, put them in a serving bowl and mix with cabbage, coriander, pumpkin seeds, onions, and sauce. Pour sesame seeds over and serve.
