The Brussels sports club L'Usine is sharing its online courses three times a week for free. Sports sessions that are also accompanied by nutritional advice with healthy recipes. The latest one? That of real Lebanese hummus, the most famous chickpea puree to make at home!
500 g chickpeas
3 cloves of garlic
1 bay leaf
Very fruity olive oil or sesame oil
Hot pepper powder
The day before, soak the chickpeas in cold water.
Put them in 2 liters of cold water with the bay leaf and 1 clove of garlic, bring to a boil and cook for 1h30 to 2h.
Salt and pepper halfway through cooking.
Drain the chickpeas, save the cooking water.
Mash the chickpeas, put them back in a saucepan and heat over low heat.
Whisk in 10 cl of warm oil, add a little cooking juice and lemon juice.
Mash the garlic in a mortar with 2 spoonfuls of oil, add this to the pan off the heat, sprinkle 1 pinch of chilli.
Serve sprinkled with paprika, garnished with black olives and accompanied by lemon wedges.
