Summery recipe: fresh lemon mousse

The perfect alternative to a chocolate mousse, but for warm days. Replace chocolate with lemon and you will have a delicious summer dessert. Here's how!


200 ml of lemon juice
3 tablespoons of water
3 eggs
7 tablespoons of powdered sugar
1 tablespoon of corn starch


Step 1: Heat the lemon juice and 3 tablespoons of water. Separate the protein from the yolks. Blanch the egg yolks with 4 tablespoons of powdered sugar and add some Maïzena®.

Step 2: Spoon the lemon juice and warm water over the egg mixture and mix well. Return this mixture to the heat and allow to thicken while stirring. When you have some kind of custard, remove it from the fire. Pour into a bowl and let it cool.

Step 3: Beat the egg whites stiffly with the remaining 3 tablespoons of sugar into a meringue. Mix this meringue with the lemon mixture and then pour into 6 ramekins. Cool for 3 hours to allow the mousse to set. Enjoy this refreshing dessert the same day.
