The Frosted Recipe of Yannick Alléno, Chef At the Royal Mansour Marrakech

To make the frosted coconut recipe, you will need the following ingredients:

  • 2 coconuts and a coconut sorbet
  • crispy coconut cookie
    • 120 g white chocolate
    • 35 g feuilletine
    • 35 g Breton shortbread
    • 45 g grated and toasted coconut
  • lemongrass jelly
    • 100 g caster sugar
    • 60 g lime juice
    • 60 g lemon juice
    • 200 g of water
    • 20 g lemongrass stick
    • 7 g gelatin leaves
  • whipped cream
    • 200 g liquid cream
    • 125 g coconut puree
    • 5 g vanilla (vanilla pod)
  • lemon zest and shredded coconut for decoration
